Roasting romaine sounded strange to me the first time someone suggested it. After all, the quality I like most about romaine is its crispy texture. I was not at all sure roasting romaine was a good idea. When I got around to trying it, I was sold.
Roasting brings out the natural sugar in romaine as well as the other vegetables in this salad. Also, the flavor become more concentrated and intense. The medley of onions, red peppers, portabello mushrooms and tomatoes mixed with romaine creates a satisfying salad.
Before serving this salad, drizzle the vinaigrette dressing over the top. I enjoy this salad for its taste, buy I love it for its color and texture. Most of all, I know this salad is good for me. That makes me happy!
Roasted Romaine with Garlic & Onion Lavender Dressing
A warm medley of chunky vegetables can be served as an entrée or a first course. The roasting process boosts the flavor.
1 head romaine lettuce, washed and dried, cut in half through the core
1 whole red bell pepper
2 portabello mushrooms
2 medium tomatoes cut in 1/2 inch chunks
1 whole sweet onion -- sliced into 1/2 inch rings
For the dressing, whisk together the following ingredients:
2 tablespoons balsamic vinegar
2 tablespoons fresh lemon juice
6 tablespoons extra virgin olive oil
1 tablespoon minced parsley
1 tablespoon minced chives
1/2 teaspoon lavender buds, finely ground using a spice grinder
1 clove garlic, minced
1/2 teaspoon salt
1/4 teaspoon freshly ground pepper
1. Remove stems from mushrooms and brush them clean. Place onto hot grill or hot dry frying pan over high heat and roast for 3 minutes on each side. Remove and set aside.
2. Place romaine lettuce, cut side down, on a hot grill or a hot dry frying pan. Roast for 1 1/2 minutes on each side or until lettuce has grill marks. Remove from pan and set aside.
3. Grill bell peppers, turning every minute until grill marks appear on each side. Grill onions turning 30 seconds on each side. Set aside.
4. All vegetables should have grill marks on the outside, but remain slightly raw on the inside.
5. Combine olive oil, Tuscan Lavender Seasoning, and balsamic vinegar. Set aside.
6. Cut roasted vegetables into large chunks and place in a salad bowl. Add tomatoes and dressing, and toss lightly.
Makes 2 entrée servings

Grilled Pear Crostini
Appetizers have always held a special place in my food memory bank. Many years ago, before eating green was in vogue, my mother grew her own vegetables, made most everything from scratch, and fed her family fresh, healthy foods. When her children were too hungry to wait for dinner, my mother created a platter of carrots, celery, cucumber and radishes. Then I did not know that this was an appetizer. Now while I still enjoy appetizers and I continue to look for healthy options, I also seek more complex flavors. Combining pears, lavender and goat cheese results in a pleasing flavor fusion. Serve this with a cold white wine such as pinot grigio.
Grilled Pear Crostini
2 red pears
1 tablespoon olive oil
1 tablespoon culinary lavender buds, ground into powder
1 baguette, cut into 12 slices, each 1/4 inch thick
1. Peel and core pears
2. Slice into 1/4 inch thick rings
3. Rub with olive oil and lavender
4. Grill apple rings over medium heat. Turn once after apple is softened and has grill marks, about 4 minutes. Remove from grill and cut each ring in half.
5. Grill baguette slices, turning once until slightly toasted, about 1 minute.
6. Spread bread with goat cheese and top with apple slices.
7. Place crostini on a platter and sprinkle with 1/2 teaspoon chopped lavender.
Makes 12 crostini

Roasted Leg of Lamb
Easy, elegant and delicious, this dish is perfect for a dinner party or patio supper. The lamb soaks up the lavender-infused marinade. The result is a tender and palate-pleasing main course.
1 4-pound boneless, butterflied leg of lamb
2 tablespoons soy sauce
1/2 teaspoon lavender buds
2 cloves of garlic, pureed
1. Flatten the lamb by pressing on it and place in a large dish, boned side up.
2. To ensure even cooking, make 1 inch slashes in 2 or 3 places at thickest part of the meat.
3. Rub 1 tablespoon of olive oil on the unboned side of the lamb. This side faces down in the baking dish.
4. Rub remaining olive oil along with the soy sauce, lemon juice, lavender and garlic puree onto the top side.
5. Marinate lamb for one hour.
6. Place in oven pre-heated to 375°F. Roast for 20 minutes or until temperature reaches 120°F.
7. Brush with olive oil, place under broiler for 7 minutes until the lamb is browned. Let sit for 8 minutes. Then cut into diagonal slices.

1 tablespoon butter
1/2 cup minced onion
1 teaspoon herbes de Provence
1/8 teaspoon pepper
- Heat oil in heavy large saucepan over medium-high heat. Add onion, minced ginger and herbes de Provence. Sauté until onion is translucent, about 5 minutes.
- Add chicken stock and sliced carrots. Cover and simmer until carrots are tender, about 45 minutes.
- Working in batches, puree mixture in blender or processor. Return soup to saucepan.
- Stir in orange juice. Cook over low heat 5 minutes. Mix in curry, salt and pepper. Season soup to taste with salt and pepper. Bring to simmer before continuing, thinning with more stock if desired.
- Ladle into bowls, garnish with snipped chives and serve.

Making Perfect Chocolate Mousse
Chocolate Mousse, an elegant dessert, became popular in the United States in the last part of the 19th century. The rich and frothy dessert is usually made with eggs, chocolate and cream. Mousse is a French word meaning foam. Julia Child’s chocolate mousse recipe uses egg yolks, sugar and butter and instead of cream, Julia uses egg whites. Today, most people do not want to eat raw eggs, so I began looking for an eggless version of chocolate mousse. I found three alternatives. The first and the most simple uses chocolate, sugar and whipped cream. Simple to make, this recipe results in a rich, dense mixture with an intense chocolate flavor.
Ingredients for 6 people:
3.5 ounces (100 g) dark chocolate (70% chocolate)
5 ounces (150 ml) heavy (thick) cream
1 ounces (25 g) sugar
- Break the chocolate into pieces and then melt it, using just enough heat to gently melt the chocolate. Stir the chocolate with a wooden spoon as it is melting.
- While the chocolate is melting, add the sugar to the cream and then whip the cream until it is foamy.
- Once the chocolate is melted, "fold" in the whipped cream.
- Spoon the mixture into attractive glasses. Place the glasses in a refrigerator for at least an hour before serving, to allow the chocolate to cool.
Preparation Time: 15 Minutes Cooking Time: 5 Minutes
Another eggless version of this French classic uses gelatin as the thickening agent. I have not yet tested this one. It looks easy. I found this one on the Food Network. Hershey also has a Chocolate Mousse recipe.
Ingredients
1 3/4 cups whipping cream
12 ounces quality semi-sweet chocolate chips
3 ounces espresso or strong coffee
1 tablespoon dark rum
4 tablespoons butter
1 teaspoon flavorless, granulated gelatin
Directions
Chill 1 1/2 cups whipping cream in refrigerator. Chill metal mixing bowl and mixer beaters in freezer.
In top of a double boiler, combine chocolate chips, coffee, rum and butter. Melt over barely simmering water, stirring constantly. Remove from heat while a couple of chunks are still visible. Cool, stirring occasionally to just above body temperature.
Pour remaining 1/4 cup whipping cream into a metal measuring cup and sprinkle in the gelatin. Allow gelatin to "bloom" for 10 minutes. Then carefully heat by swirling the measuring cup over a low gas flame or candle. Do not boil or gelatin will be damaged. Stir mixture into the cooled chocolate and set aside.
In the chilled mixing bowl, beat cream to medium peaks. Stir 1/4 of the whipped cream into the chocolate mixture to lighten it. Fold in the remaining whipped cream in two doses. There may be streaks of whipped cream in the chocolate and that is fine. Do not over work the mousse.
Spoon into bowls or martini glasses and chill for at least 1 hour. Garnish with fruit and serve.
(If mousses are to be refrigerated overnight, chill for one hour and then cover each with plastic wrap)
The third option for an eggless chocolate mousse is based on using ricotta cheese. Fast, easy and delicious, this is my favorite recipe. I came across this recipe in the January issue of Real Simple.
Chocolate Ricotta Mousse
1 15 ounce container of ricotta (about 2 cups)
2 tablespoons confectioner’s sugar
4 ounces semi-sweet chocolate, melted.
(Plus a little more for topping)
- In food-processor, blend ricotta, sugar and melted chocolate.
- Divide among bowls and top with shaved chocolate.
The mousse can be refrigerated until ready to serve. Up two days.
Bring to room temperature before serving.

Testing recipe gets me in a great mood. Yesterday, my grandchildren and I made Blueberry Cheesecake Bars. The original recipe was published in Better Homes and Garden in the summer of 2008. One of my sisters sent it to me suggesting I modify to include lavender. I changed the recipe some months ago, and yesterday I did the taste test.
I added lavender sugar to the cream cheese topping. The combination of blueberries and lavender is a natural. Although, you can barely detect the taste of lavender, the blueberries just jump out and express all their fantastic flavor.
What do they say about looking good? Better to look good than to feel good! These bars taste terrific and they look elegant, too.
Here is the recipe, enjoy. Please comment and tell me what you think about the lavender.
Blueberry Cheesecake Bars
1/2 cup butter
3/4 cup finely crushed graham crackers
1/2 cup all-purpose flour
1/2 cup flaked coconut
1/2 cup ground pecans
1/4 cup sugar
1 1/2 8-oounce packages cream cheese, softened
2/3 cup lavender sugar
4 eggs
1 tablespoon milk
1 teaspoon vanilla
2 cups fresh blueberries
Preheat oven to 350º F. Lightly grease 13x9x2 inch baking pan; set aside.
For crust, heat butter in small saucepan over medium heat until the color is like light brown sugar. Remove from heat; set aside.
In medium bowl, stir together graham crackers, flour, coconut, pecans, and 1/4 cup sugar. Stir in butter until combined. Evenly press on bottom of prepared pan. Bake 8 to 10 minutes or until lightly browned.
Meanwhile, in large mixing bowl beat cream cheese and 2/3 cup lavender sugar on medium until combined. Add eggs, milk, and vanilla. Beat until combined. Pour over hot crust. Sprinkle with blueberries.
Bake 18 to 20 minutes or until center appears set. Cool in pan on rack. Cover and refrigerate. Cut into bars. Store covered in refrigerator. Makes 32 bars.
